What does an electric jar vacuum sealer not do?

It does not make low-acid vegetables, meat, dairy, sauces, soups, or other perishable foods safe to store at room temperature. Those foods may still require refrigeration or freezing after sealing. A vacuum also does not replace the tested time, temperature, acidity, and pressure controls used in home canning.
